“While the high heat kills the bugs and makes the food safe for preservation, it also results in the destruction of many beneficial vitamins and enzymes in the food. It is also important to mention that there are concerns over things like lead or Bisphenol A (BPA), leaching into the foods contained in cans over time. The term for this contamination is “migration.”
WOW! I never knew how they actually preserved canned food. I always thought they added a variety of preservatives and air sealed tight the can. I never knew there was an actual heating process involved…
“Also, check dented cans because it could possibly be a sign of botulism contamination.”
THAT’S why they discount dented cans!! This makes sense… Next time I perchance a can of beans or corn i will make sure to look for dents!! GREAT READ!
I still prefer frozen (unprocessed) food over canned food. The only canned foods i buy are beans, tuna, tomatoes, and corn. I ALWAYS rinse them to get the excess salt, sugar and preservatives off as well.
