What exactly is tofu?
 
I am thinking about eating grilled tofu for dinner.. I am getting a little tired of fish and chicken and want to change it up a bit… I go through my phases…

Tofu, also known as soya curd, is a soft cheese-like food made by curdling soya milk with a coagulant. Tofu is a rather bland tasting product that easily absorbs the flavours of the other ingredients.
 
Rich in Nutrients - Tofu is rich in both high quality protein and B-vitamins. Tofu is, therefore, an excellent substitute for meat in many vegetarian recipes. As opposed to soya milk, tofu contains a lot of calcium. This calcium originates from the coagulant (nigari). When making tofu, the soy proteins are precipitated with calcium, providing tofu with a ready source of calcium. Calcium in tofu contributes to the prevention of osteoporosis.
Easy to digest - An additional benefit of tofu is that it is extremely easy to digest. This is because the soybean’s fiber is removed during the manufacturing process.

I love tofu! It’s a staple of a lot of Japanese dishes and they put it in a lot of soups and whatnot. It makes for a great alternative if you are tired of other protein sources. Grilling can be a little tough - you need to make sure to get the extra firm kind, otherwise it will fall apart on you.

thanks! i did buy the extra firm tofu.  I cooked it in a pan with pam evoo. Then  added salt pepper and basil on both sides,, It was pretty good!
 
Is tofu considered a dairy?

i think its just soy based.. i am not sure about this..

Soy isn’t dairy… are you thinking that because of “soy milk”? It’s definintely a plant.

Yep… you guys are right… i was comparing it to soy milk… now i feel like a complete ass lol

soy is one of the most polarizing foods in the industry. it has gone from an exotic Eastern food, to a new wonder food, to a bad thing, and now it’s kinda somewhere in the middle with people being confused about what to think.

i’d say that its good for a snack or alternative, but i wouldn’t make it a large part of your diet. it’s a great source of protein, but it has a lot of bad nutrients in it as well.

I like tofu… it’s delicious and easy, and there are a ton of things you can do with it. That being said, I agree with Pete that it shouldn’t be the staple of your diet.

One of the problems frequently encountered with eating a vegetarian diet is the problem of getting adequate protein. To meet the body’s protein requirements, many vegetarians turn to soy based foods such as tofu, soy milk, and fermented soy products such as miso and tempeh. One concern about eating soy based products is their effect on digestion. People who eat large quantities of soybean based foods complain of bloating, flatulence, and indigestion in greater numbers than people who eat meat based protein. Is soy hard to digest?
 
 
There are actually two factors that play into soy’s digestibility. Soy, like most legumes, contains compounds known as trypsin inhibitors. Trypsin is an enzyme produced by the pancreas that’s important for protein digestion. Without the action of trypsin, protein doesn’t get completely broken down or digested. This can lead to symptoms of gas, bloating, and generalized indigestion.
 
 
Another reason soy is hard to digest is that it contains the oligosaccharides raffinose and stachyose. These are the same indigestible carbohydrates found in beans, another big gas promoter. In some soy based foods, the oligosaccharides have been removed, but in many soy products, such as soy flour, significant quantities remain. Unfortunately, cooking soy foods doesn’t make them any more digestible since the oligosaccharides aren’t broken down by heat. People vary in their degree of tolerance to soy foods. Some people have no problems eating them, particularly in smaller amounts, but when larger quantities are eaten especially in conjunction with an overall high fiber diet, indigestion and gas may result

How to Cook Tofu

Why It’s Good for You

Tofu is packed with protein (20 grams per half cup) and low in calories (just 183 per four ounces) and contains alpha-linoleic acid, a heart-healthy fat. Research suggests that soy protein found in tofu can lower your risk of a heart attack.

“Most people don’t season or cook tofu properly,” says Lon Symensma, executive chef at Buddakan, an Asian restaurant in New York City. Here’s how to make it just right every time.

1. Cut tofu into half-inch cubes. The smaller they are, the better they cook.

2. Coat the cubes lightly with cornstarch to absorb any excess moisture.

3. Season tofu with zesty spices like ginger, ground red pepper, and/or paprika.

4. Saute in oil over high heat for 45 seconds to a minute — just long enough to sear the outside and heat the inside.
