Geez Max you didn’t even mention the awesome tomatos we had.

I get these wonderful local organic veggies delivered to us every two weeks. The tomatos are by far they best thing they give us.

I put them in the salad we had for lunch. I also had carrot and some almonds for a snack.

OK after dinner we made this…

http://crossfitoakland.com/sites/default/files/images/Sushi_2.jpg

Nori Snack Roll

Ingredients
1 Nori sheet (the kind used for sushi rolls)
1-2 Tbsp nut butter (almond, cashew, or tahini; my favorite is cashew butter)
1 Tbsp unsweetened shredded coconut
1/3-1/4 carrot cut thinly lengthwise

Directions

Place the nori sheet on a cutting board and spread a thin layer of nut butter on the sheet but not all the way to the edges.
Sprinkle the shredded coconut across the nut butter and pat gently.
Layer the carrots on top of the coconut-butter layer across a 1/3 of the nori sheet.
Carefully roll the nori sheet over the stuffing. Seal the roll
by wetting the edge of the sheet with a little water and pressing it to
itself as you roll.
With a serrated knife, cut the roll into bite-sized sections.

It was different fpr sure but not bad.

I had leftover beef stew from two days ago.

The slow cooker is a great way to prepare multiple meals for the week.

I had Max prepare some curry chicken salad for lunches during the week.
