Here are some 20 minute meal suggestions, for those  of you who don’t have a lot of time..

 
[b]Lemon-Thyme Chicken with Sauteed Vegetables:
1. In a ziplock bag, combine 3 tablespoons lemon juice, 2 teaspoons garlic, and 2 teaspoons thyme; season to taste with salt and black pepper. Add chicken tenders, seal the bag, and gently turn to coat. Set aside.
2. Heat 2 teaspoons canola oil in a large skillet over medium-high heat. Add shallot, remaining garlic, edamame, and tomatoes; saute 4 minutes.
3. Use a vegetable peeler to slice zucchini into long ribbons. Add zucchini and remaining lemon juice and thyme to vegetables in skillet; saute 2 to 3 minutes. Transfer to a serving bowl, stir in feta, and season with salt and black pepper to taste.
4. Add remaining oil to skillet. Remove chicken from marinade and saute 2 to 3 minutes a side or until cooked through. Serve with vegetables.

[/b]Mustard-Rubbed Pork Tenderloin with Brussels Sprout Ragout :
[b] 1. In a medium pot fitted with a steamer, steam brussels sprouts 8 minutes1. In a medium pot fitted with a steamer, steam brussels sprouts 8 minutes[/b]
2. Sprinkle 1/2 teaspoon each salt and black pepper on pork and then spread with mustard. In a 12-inch skillet, warm 1 tablespoon olive oil over medium-high heat; add pork and cook 7 minutes. Turn and cook 6 minutes more; remove from pan and slice. Add wine and chicken broth to pan and stir, scraping up brown bits; set aside and keep warm.
3. Warm remaining olive oil in a small saute pan over medium-high heat. Add pancetta or bacon and saute until brown, stirring occasionally, about 3 minutes. Reduce heat to medium and add onion; cook until translucent, 5 minutes. Add cherries, sage, and brussels sprouts; cook 3 minutes more. Season with remaining salt and black pepper.
4. On a platter, arrange pork and vegetables; drizzle with sauce.

 Shrimp spinach salad……5 minute meal
 
-Cook shrimp over stove top, add salt pepper, basil, and mint
 
-cook for 5 minutes
 
 
-Add to spinach salad
 
-you can add cucumber, avocado, peppers, celery, cherry tomatoes, beets, feta cheese, goat cheese, blue cheese, nuts, sliced fruit, dried fruit, butter nut squash, ect…
 
Soooo many options for a quick meal…

Do you have any other quick meal recipes?
 
I love chicken Cajon tenderloins!
 
-Organic chicken tenderloins
-Cajun spice
-Himalayan sea salt
-Pepper
-Basil
-Dijonaise or spicy mustard
 
Directions 
 
-Mix everything together in a bowl
-Pam spray non stick pan
-Cook chicken 5-8 min per side until lightly browned
 
 
Serve with rice, sweet potatoes, salad, veggies whole wheat wrap, quinoa ect… sooooo yummy

Here is a good one:
 
Italian Turkey Sliders with Honey Dijon Mayo:
 
Ingredients:
20 ounces lean ground turkey
2 tablespoons Parmesan cheese, grated
1 clove garlic - minced
1/2 teaspoon basil,, dried
1/2 teaspoon oregano,, dried
1 teaspoon salt
freshly ground black pepper
16  dinner or slider rolls
1/3 cup mayonnaise
1 tablespoon honey Dijon mustard
 
Directions:

Combine ground turkey, cheese and all seasonings. Mix together well.
Shape turkey into 16 small patties.
Place patties on a greased baking sheet.
Bake at 350 degrees F for 8 - 10 minutes or until cooked through. Be careful not to cook too long or they will become dried out.
Combine mayonnaise with honey Dijon mustard and stir until well blended.
Place on rolls and top with honey Dijon mayo.
Enjoy!

Gnocchi with Zucchini Ribbons & Parsley Brown Butter:
 
Ingredients:
  1 pound fresh or frozen gnocchi
  2 tablespoons butter
  2 medium shallots , chopped
  1 pound zucchini (about 3 small), very thinly sliced lengthwise (see Tip)
  1 pint cherry tomatoes , halved
  1/2 teaspoon salt
  1/4 teaspoon grated nutmeg
  Freshly ground pepper to taste
  1/2 cup grated Parmesan cheese
  1/2 cup chopped fresh parsley 
 
Directions:
Bring a large saucepan of water to a boil. Cook gnocchi according to package instructions until they float, 3 to 5 minutes. Drain.
Meanwhile, melt butter in a large skillet over medium-high heat. Cook until the butter is beginning to brown, about 2 minutes. Add shallots and zucchini and cook, stirring often, until softened, 2 to 3 minutes. Add cherry tomatoes, salt, nutmeg and pepper and continue cooking, stirring often, until the tomatoes are just starting to break down, 1 to 2 minutes. Stir in Parmesan and parsley. Add gnocchi and toss to coat. Serve immediately.

I know PASTA is not good for you… I try to cook with whole wheat pasta that seems to be healthier.. Costco carries it in bulk, it  makes a lot of spagehetti…
But as you mentioned  eat on cheat days….

Here is a recipe I found online that looks different but good…
 
Chicken Corn Pizza….
 


1 12-inch packaged prebaked pizza crust
1 cup ricotta cheese
1 cup finely shredded Parmesan cheese
1/2 tsp. ground black pepper
1 10-oz. pkg. frozen whole kernel corn in butter sauce
1 6-oz. pkg. refrigerated cooked chicken breast strips
1/2 cup coarsely chopped red sweet pepper
1 Tbsp. finely shredded lemon peel
2 tsp. dried tarragon
1 tsp. bottled minced garlic
1/2 cup crumbled goat cheese
1 2 1/4-oz can sliced pitted ripe olives, drained
1/4 cup chopped fresh parsley

 
directions
 


Preheat oven to 450 degrees F. Line baking sheet with foil. Coat foil with nonstick cooking spray. Place pizza crust on foil; set aside.
In bowl combine ricotta, Parmesan, and black pepper. Spread on crust leaving 1/2-inch space around edge. Bake 5 minutes.
Transfer corn and sauce from package to microwave-safe bowl. Microcook on high (100% power) 3 minutes. Stir. Microcook 1 minute more. Stir in chicken, sweet pepper, lemon peel, tarragon, and garlic. Remove pizza from oven. Spoon corn mixture over ricotta mixture on crust.

yes i can think of lots of ways to do pizza….
I ate a pizza place once that served there pizza with potato cakes on top, sounds weird, but it was actually very yummy…
