I happen to love anything that has pumpkin in it. Here are some good nutrition values below:
As well as a very good recipe for
Bacon and Pumpkin Soup.
Health benefits: Boasting high levels of a variety of vitamins
and minerals, including iron, magnesium, niacin, potassium, vitamin A,
and vitamin C, pumpkin is a nutritional powerhouse vegetable. The only
bad point is that also contains a fair amount of natural sugar (1.6g per
cup), so beware the calorie count when making it into an even sweeter
dessert.
Nutrition: (1 cup, raw): 30 calories, 0.1g fat (0.1g saturated), 7.5g carbohydrates, 0.6g fiber, 1.2g protein

Pumpkin Bacon Soup

Ingredients

slices bacon, chopped

1
onion, chopped

1
29 ounce can pumpkin

3 1/2
cups low-sodium chicken broth

1
cup applesauce

2
teaspoons ground ginger

1/2
cup light sour cream

salt

pepper


Directions
1. Saute 2 slices chopped bacon and 1 chopped onion; drain fat.

2. Add one 29-ounce can pumpkin, 3-1/2 cups low-sodium chicken broth, 1 cup applesauce and 2 tsp. ground ginger.

3. Add salt and pepper; bring to boil. Simmer.

4. Add 1/2 cup light sour cream. Makes 4 servings.

I would have never thought about this but you can never go wrong with bacon!
