Summer Vegetable Frittata

Ingredients:

-2 whole eggs
-4 egg whites
-1/4 cup fat free parmesan cheese
-salt & pepper
-1 Tablespoon grape seed, avocado, or coconut oil (optional pam spray)
-1 small sweet potato, cubed & steamed
-1 cup summer squash, chopped
-1 cup broccoli, chopped
-1/4 cup water
-2 oz goat cheese

Directions:

1. Whisk eggs and egg whites with parmesan cheese, salt & pepper. Set aside.

2. Heat oil in a large skillet on high, then add the sweet potato and a little S&P, and cook until they get a little color. (Note: I just chopped up my sweet potato and microwaved it for two minutes in a gladware container with a little water.)

Add the squash, broccoli and water into the skillet and place a lid on top, then steam for 2 minutes, or until the squash and broccoli still have a little bite.

3. Add the egg mixture to the skillet and spread it out. Run a spatula around the outside edges every so often so the eggs don’t stick.

4. When the bottom has set, and the top is still slightly runny, add the goat cheese and place the skillet under the broiler for 3-4 minutes, or until the top is cooked.

In one pan, melt some butter and put two pieces of Texas toast in to fry in the butter.

In another pan put two pieces of bacon on to cook.

In a third pan, cook a little bit of mild pork sausage.  While the pork sausage is cooking, whip two eggs in a bowl, throw them in iwth the sausage when its done, it should be crumbled by the way.

take the bread, which is now browned on one side, and put a piece of cheese on it, then put the egg/sausage mix on that.  In the pan that had the egg/sausage mix in it lay down two cold cuts, one of turkey, one of ham.  Let them brown.  when they have browned (doesnt take long) lay them on the eggs, and put another piece of cheese on top of them, then the bacon on top of that, then cover with the second piece of toast.  now just to make sure you have it right, here is your sandwich listed from the top to the bottom.

Buttered bread

Bacon

Cheese

Ham and Turkey

Eggs and sausage

cheese

Buttered bread.

This is the simplest egg breakfast ever…

Take as many egg white you usually use to make scrambled eggs. Throw in some red and green bell peppers, mushrooms, onions, and any other vegetable ( maybe brocoli…i don’t know what ever gets you fired up to chow down.) put all the delicious nutritious vegetables in a coated pan. You can coat it with butter olive oil, or that fake spray on coating junk, it doesn’t matter. With a spatula toss the veggies around until they begin to brown over, or burn them whatever makes your mouth water. After they are cooked to your perfection throw in the eggs, and don’t let them form an omelet layer keep ‘em scrambled. After the eggs go from watery to cooked add some cheese on top, or don’t you’re eating this remember… and guess what, you’re done. Dig in and remember you’re the one eating it not your brother, wife, uncle ( unless you are cooking it for them) so feel free to ignore every extra ingredient and add your own i personally throw in some sausage every once in a while or maybe some bacon… get after it and dig in

Eggplant and Feta Egg White Omelet

Ingredients

-Cooking oil spray
-3 white mushrooms, trimmed and sliced
-¼ cup chopped red onion
-1 cup eggplant slices, ¼” thick (3 ounces, ¼ of an average eggplant)
-¼ cup water, divided
-½ cup egg whites (3 whites)
-1 ounce reduced-fat feta cheese, crumbled

Directions

-Place medium nonstick skillet over medium heat; when hot, coat with cooking spray. Add mushrooms and onion, season lightly with salt and pepper, and cook until soft, 2 to 3 minutes.

-Transfer to plate and return skillet to heat.

-Add eggplant slices to pan, arranging in a single layer. Add 2 tablespoons water to pan, allow liquid to boil away, and cook one minute.

- Turn eggplant slices with rubber spatula and add remaining 2 tablespoons water.

-When water dissipates, add egg whites to pan and top evenly with mushrooms and onions.

-Cook without stirring until eggs are set, 3 to 4 minutes. Use rubber spatula to lift edge of omelet; tilt pan so uncooked egg runs underneath.

- Sprinkle with cheese; fold omelet in half and slide onto plate.

I dont eat that daily.  I dont train twice a day like the guys I coach do, so I dont need that amount of calories, protein, or fat.  Thats way too much breakfast for me to do on a regular basis, but I sure do enjoy it once in a while!  Only problem is, when I eat that for breakfast, good as it is, im not hungry again till supper, lol.
What is it about my diet advice that you dont belive in?  For the record, I believe in as high a vegatable intake as possible, a diet relatively high in protein and fat and relatively low in carbs, and an emphasis on good fat, meaning lots of unsaturated fats and a correct Omega 3 and Omega 6 balance.  And, to be clear, I am not a “no carb” guy, I just dont think fat is evil.

Had to share these yummy ways to spice up egg whites…

Source: M&F Hers Staff

Use these eight serving suggestions to wake up these protein powerhouses…

Egg whites are a fit female’s easy protein source - two can be cooked in the microwave in two minutes. By themselves, though, they can be pretty plain and flavorless. Use these tips to liven up these protein powerhouses. Each suggestion uses two egg whites.

>> Mix the whites into oatmeal or Cream of Wheat. Add cinnamon and Splenda for more flavor.

>> Place eggs in a small corn tortilla, top with 1 ounce low-fat shredded cheese and 1⁄3 cup of your favorite salsa.

>> Mix the whites with 1⁄2 cup fat-free cottage cheese and 1⁄2 cup blueberries.

>> Before cooking, mix egg whites with 1 Tbsp. blue cheese and 1⁄3 cup chopped spinach leaves. Microwave two minutes.

>> Place whites into a whole-wheat pita pocket with 1 ounce shredded low-fat Monterey jack cheese and 1⁄3 cup cooked vegetarian refried beans. Add shredded chicken for more protein.

>> Hollow out a toasted onion or bialy bagel, then replace filling with cooked egg whites.

>> Create healthy Sloppy Joes for four. Sauté 1 cup chopped onions over medium heat until transparent. Add 1 pound extra-lean ground turkey or beef; cook about five minutes. Add egg whites and cook until hard, about three minutes. Serve over spinach or atop a whole-wheat English muffin.

>> Sauté 1 cup stir-fry vegetables in 1⁄2 Tbsp. oil over medium-high heat until vegetables are tender, about two minutes. Add cooked egg whites and cook one minute. Remove from heat onto serving plate and drizzle 1⁄2 Tbsp. low-sodium teriyaki sauce over egg and vegetable mixture.
