I love sweet potatoes not just during the holiday season. I tried this one one day and it was ohh so good…
Sweet potato pancake with protein frosting:
Ingredients:
1 medium sweet potato (4 oz)
1/4 cup organic pumpkin, canned
1/8 cup oats
1/2 scoop whey protein powder
1/2 cup egg whites
1/2 tsp baking powder
Stevia, to taste (sweetner)
Cinnamon, to taste
1 tsp vanilla extract
Frosting:
1/4 scoop vanilla whey protein powder
1 tsp cinnamon
1 packet Stevia (sweetner)
I cup Water
Instructions:

Set a nonstick pan on medium-high heat.
Microwave the sweet potato for 5–8 minutes, or until soft.
After the potato is cooked, blend all of the ingredients together in either a blender or with a hand mixer.
Pour mixture into the pan. Cook about 2 minutes per side.
To make frosting, mix all ingredients in a small bowl with a
fork. Slowly stir in water until you achieve a smooth consistency.
Spread on top of pancake.

this sounds like a great day after thanksgiving healthy thanksgiving .
 
i also love plain old roasted sweet potato fries.
 
pre heat ovel to 415 degrees
place foil over baking sheet
 
Dice and peel sweet potatos 1 1/2 inch length
drizzle olive oil
sea salt and pepper
 
DONE! so so yummy
 
chop sweet potatos

idk if frosting on pancakes sounds all the good too me. OR sweet potato pancakes. I think if your gonna do pancakes you gotta go with buttermilk pancakes. OR do pancakes with some type of fruit. Maybe chocolate chip pancakes.

i hope to god that you aren’t advising that you put a pan on medium heat before cooking potato for 5-8 minutes in the microwave and blending all the ingredients together… that’s a quick way to ruin your pan and start a fire! hahahaha

Pete… do you have any creative sweet potato recipes for thanksgiving dinner… I was thinking about roasting them with parsnips olive oil, salt, pepper, and rosemary… i woulnt mind new creative healthy suggestions…
