Flax seed muffins
 
Dry ingredients
 


1 cup white bean flour
1 cup almond meal
¾ cup flax meal
¾ cup oat bran
1 cup honey
2 tsp baking soda
1 tsp baking powder
½ tsp salt
2 tsp cinnamon

 
Wet Ingredients
 
·     
¾ cup almond milk
·     
2 beaten eggs
·     
1 tsp vanilla
·     
2 tsp walnut
oil
 
Fruit
 
·     
1 cup
shredded carrot
·     
1 peeled and
shredded apple
·     
½ cup golden raisins

·     
½ cup dried
cranberries
·     
½ cup sunflower
seeds
 
 
Directions:
 


In a large bowl mix dry ingredients together.
In a separate bowl, mix wet ingredients and fruits together then pour over
dry ingredients and mix by hand until moist.  Batter will be thick. Do not mix too much (10-15
strokes should be enough). 
Line muffin tin with paper cupcake liners
then spoon batter to the top of each tin.  They don’t rise very high so don’t be afraid to fill
them to the top.  Bake in a 350-degree
oven for 12 to 15 min.
Omit the nuts if you do not care for them.
Double the batch if you are going to the trouble to make them. They should
be refrigerated after the first day since there is no preservative, they
will mold if left on the counter for too many days.

Here is a freakin awesome flax seed muffin recipe I’ve used for years, adapted with some changes I made to make them even cleaner. These make an amazing snack and they are better than most muffins you’ll find in restaurants or stores that are made with regular white flour or sugar, but so much cleaner.

I will definiteley try your recipe, it has really healthy ingredients in it. 
 
Did you ever see this recipe i postd a while back … its by ezway


Flax bread
 
-2 cups ground flaxseed
-1tablespoon baking powder
-1 teaspoon salt
-3 packets of stevia
-2 wholeeggs
-5 eggwhites
-5 tabelspoons flax oil, coconut oil or olive too
-1/2 cup water
 
Mix dry ingredients together then add the wet ingredients. I then added a bit of cinnamon and vanilla extract.
 
Bake at 350 for about 20 mins
 
12 pieces each
Cals: 145
Fat: 11.4
Carbs: .16
Protein. 6.5
 
You can be creative and mix nuts,
raisons, protein powder, chocolate chip, coco powder, pumpkin, other spices
etc.  
 
If you want to add additional protein just add in a ½ scoop of vanilla protein
powder

hm, both of those recipes sound… hearty, lol. they do sound tasty though, i’ll definitely have to break out the easy-bake oven and give them a try!

jester you still have an easy-bake oven?! you could probably sell that thing on ebay for a couple grand, haha.

Aw, I miss my easy-bake oven… I’ve never heard of any guys using one though, sounds really manly =oP

Wow, 10 g of fiber per cup?! That’s impressive. I really like to use the almond milk too, it’s relatively unknown but being lactose intolerant I can’t handle real milk and I like the almond milk better than soy.
