anyone have some favorite st. patty’s recipes to share??  here is one yummy corn beef one from eatingwell.com.
Corned Beef Hash
 
4 servings | Active Time: 35 minutes | Total Time: 35 minutes
 
Ingredients
 
 
2 teaspoons canola oil
1 large onion, chopped
4 cups diced cooked potatoes, or frozen hash-brown potatoes
1 cup chopped lean corned beef brisket, (4 ounces, see Tip)
1/2 cup reduced-sodium chicken broth
1/4 cup chopped fresh parsley
Salt & freshly ground black pepper, to taste
4 large eggs
 
Preparation
 
In a large cast-iron skillet, heat oil over medium-high heat. Add onion and sautá until it starts to brown, 5 to 8 minutes. Add potatoes and cook, stirring, until they brown in spots and become crusty, about 8 minutes more. Stir in corned beef and broth and cook, scraping up any browned bits, until liquid is absorbed, 5 to 8 minutes. Add parsley and season with salt and pepper.
Meanwhile, fill a large skillet with 2 inches salted water and bring to a gentle simmer. Break eggs, one at a time, onto a saucer and slide into the simmering water. Poach eggs until set to desired firmness, 4 to 5 minutes.
Divide hash among 4 plates. Place eggs on top of hash.

Tips & Notes
 
Tip: Corned beef can be purchased at your supermarket deli. Be sure to specify lean: it has 1 gram fat per ounce and an ounce of regular corned beef has 5 grams fat.

Irish Soda bread


Ingredients
 
-4 cups flour
-1 cup splenda or stevia sweetner
-1 teaspoon baking soda
-2 teaspoons baking powder
-1/2 teaspoon salt
-3 eggs 
-1 pint  fat sour cream
-1 cup dried currants or raisins
 
Directions
 
-Preheat oven to 325 degrees F Grease two 8-by-4 inch loaf pans.
-Mix the flour, sugar, baking soda, baking powder and salt.
-Add the eggs, sour cream and raisins, mix until just combined.
-The batter will be thick. distribute batter evenly between the two pans.
-Bake loaves at 325 degrees F for 1 hour.

Healthy whole wheat high fiber Irish soda bread
 
-4 cupsWhole Wheat Flour
-Dry, 0.5 cup Quaker Oats - Quick 1 Minute 
-75 cup stirred Soy Flour
-.5 cup Wheat bran, crude
-4 tbsp Flax Seed Meal (ground flax)
-1 serving Applesauce - Motts No Sugar Added
-0.5 cup Black Currants, dried
-.5 cup chopped Walnuts,
-8 tbsp Land O Lakes light butter with canola oil
-2 cups Buttermilk, lowfat
-1 tsp Baking Soda
-3 tsp Baking Powder
-1 tsp Sea Salt, Fine Salt
-4 packets of Stevia Extract
 
Directions
Mix all dry ingredients, then cut in very cold light butter with a pastry knife. Make a well and pour in applesauce and buttermilk. Mix briefly then pour out on counter and knead briefly just to incorporate all liquid and flour. Divide into three balls and flatten on a sprayed cookie sheet. Slice crisscross in top. Brush with egg wash or milk. Bake at 400 degrees for 30 minutes.

i don’t really cook a lot so i usually just have a green beer or a guiness and call it a day, haha.

Paleo Corned Beef & Cabbage


Beef Ingredents
-3-4 lb. corned beef brisket (I trimmed the thick layer of fat off the bottom)
-water
-2 bay leaves
-2 cloves garlic
-ground black pepper
-water


Beef Directions
Put corned beef, pepper, garlic, bay leaves in crock pot and pour just enough water to cover beef. Cook on low for 8 hours.

Cabbage Ingredents
-1 head cabbage, quartered
-1 onion, sliced thin
-2 cloves garlic
-2 carrots, sliced
-2 tsp olive oil
-1/2 C corned beef juice from the crock pot!
-Saute onion and garlic in olive oil. Add carrots, and a splash of the broth.


Cabbage Directions
-Cook cabbage about 30 minutes before serving.
-Add cabbage, remaining broth and cover.
-Cook until cabbage is done about 20 minutes.
-Slice corned beef and serve over the cabbage
-Sprinkle with a little more black pepper and celtic grey sea salt

i love me some corned beef and cabbage. i make sure to eat some every year as a tradition and wash it down with a black & tan! this recipe sounds pretty good.

Irish Soda Bread
 
-1 3/4 cups white whole wheat flour
-1/2 cup oatmeal (ground)
-1 tsp. baking soda
-1/2 tsp. salt
-1 cup low fat buttermilk, plus a tablespoon or more if needed to moisten all flour
 
Direstions
 
-Preheat oven to 425 F. Grease or spray a small baking sheet with nonstick spray or oil.
 
-In plastic bowl, combine flour, ground oatmeal baking soda, and salt.
 
-With large plastic spoon, mix in buttermilk until mixture is well combined. Dust hands with flour, and form a doughy ball.
 
-Bake until bread is golden on top, about 35-40 minutes. Serve hot
