Protein Cake

 
I tried to post this yesterday, but it didn’t go through.  Hope it does this time!

After a little tweaking, I got a real nice cake-like texture with this recipe.

two scoops of protein powder
4 packets of instant oatmeal
2 servings of buckwheat pancake mix
1 oz. flax meal
2 eggs
4 servings of lowfat cottage cheese
1/2 cup milk
1 cup of sweetener (I use erythritol)

Whip up cottage cheese, eggs, milk in a food processor and combine with dry ingredients. Bake in an oven for about 30 minutes at 350.
I cut them into 12 squares, but for more protein, you can cut them into nine. For a variant, you can add cocoa powder, peanut butter, banana and use different flavor oatmeals, etc. 
My cocoa hazelnut oatmeal bar breakdown is:
Caories: 150
fat:  4g
Protein: 12g
Carb: 19g
Fiber: 3g
Sugar:  7g

I just made a new version of the above cake.  i added 3 apples chopped,  1/4 cup lemon juice, 1 tsp. cinnamon and 1/4 tsp cardomon.  I had to increase the milk by 1/2 cup.  It turned out delicious; however, I cooked it too long, and it’s  a little dry on top.  Luckily it’s nice and moist in the inside.

Sweet potato/Peanut butter -   This one is delicious!   It has a cheese cake like texture .  I liked it a lot and will be making it again.
Use same base mixture as original recipe.  
2oz peanut butter
1 tsp cinnamon
8 oz cooked and smashed sweet potato.  
I had to decrease milk by 1/2 cup to get right consistancy.
You get 14g of protein per slice depending on what protein powder you use.

I am a little confused? Did you use all the ingredients from your first recipe and added pb and sweet potatoe as well??
 
Can you post this entire recipe??

Same base ingredients from my first post:
two scoops of protein powder

2 servings of buckwheat pancake mix
1 oz. flax meal
2 eggs
4 servings of lowfat cottage cheese
1/4  to 1/2 cup milk
1 cup of sweetener (I use erythritol)
Add 8z cooked and mashed sweet potato and 2 servings (about 64g of peanut butter).  Adjust the milk to desired consistency.  I only needed 1/4 cup as the peanut butter and sweet potato really make it moist.   Like in the above recipe, whip these two ingredients with the wet ingredients and then combine and mix well with the dry.  Place in a sprayed baking pan and bake at 350 for about 30 minutes.  Insert a knife to check for readiness.  The texture should be like a cheese cake.
