Baked Cranberry Oatmeal

Ingredients:

*
1/2 cup old-fashioned oats
* 1/8 teaspoons ground cinnamon
* 1/8 teaspoons baking powder
* sprinkling of salt
* 1/2 cup water
* 1/2 cup nonfat milk/soy milk/almond milk (just shy of 1/2)
* 2 T liquid egg whites
* 1/2 teaspoons vanilla extract
* 2 T dried cranberries
* spray butter
* sprinkling of brown sugar

Directions:

-Preheat oven to 350 degrees.
-Spray small bread loaf pan or other oven safe single serve dish.
-Mix all above ingredients except for spray butter and brown sugar.
-Pour into pan. Spray top of loaf with spray butter. Sprinkle pinch of brown sugar on top for sweetness.
-Bake for 30-35 minutes.

Baked Apple Pie Oatmeal




Ingredients:

-1/2 cup dry oats
-1 cup water
-2-3 T liquid egg whites
-1/8 t baking powder
-pinch salt
-1/4 cup chopped apples
-1 T golden raisins
-pinch cinnamon
-pinch apple pie spice
-sugar substitute to taste
-1/2 t vanilla extract
*1-2 T almond milk optional
*raw sugar optional

Directions:

-Mix all of the above (with the exception of the milk) and bake in a 350 degree oven for 30 minutes.
-Optional: Sprinkle a little raw sugar on top and broil for 3-4 more minutes until sugar carmelizes.
-Optional: Drizzle with a little almond milk or similar.

Baked Blueberry Oatmeal

Ingredients:

-1/2 cup old-fashioned oats
-1 cup of water
-2 T liquid egg whites
-1/8 t baking powder
-2 packets sugar substitute (or sugar or none)
-Small handful of frozen blueberries (I probably added around 10) -Few sprinkles of cinnamon
-Pinch of raw sugar for top
Directions:
-Spray small bread loaf pan with cooking spray and turn oven to 350.

-Mix water and oats in bread pan. Let sit for a few minutes to soak in. Add all other ingredients.

-Bake in center of oven uncovered for 30 minutes. Once done, turn oven to broil. Add a small sprinkling of raw sugar to top of oatmeal and broil for 3-4 minutes. Serve.

Apple Peanut Butter Baked Oatmeal

Ingredients 
-2/3 cup of quick cooking oats
-3 T liquid egg beaters
-1.5 T PB2
-1/3 apple pie filling or apple slices
-1/8 t baking soda
-Dash of salt
-Sugar to taste

Directions:

-Mix the above in an oven-proof bowl. Bake in a 350 oven for 30 minutes.

6-Grain Blueberry Baked Oatmeal

Makes 1 serving

Ingredients:

-1/2 cup 6-grain oats
-1/8 tsp baking powder
-1 cup water
-1/4 cup blueberries
-2 tbs Torani sugar-free brown sugar and cinnamon syrup
-1/2 tsp vanilla extract
-sugar substitute to taste
-5 tsp nonfat cottage cheese

Directions:

-Mix the above saving cottage cheese for last. Add dollops of cottage cheese to mixture. Bake in a 350 oven for 35-40 minutes or until top browns and sides start to bubble and pull from edges.

Maple Nut Oaties
 
Ingredients:
 
-1 cup toasted rolled oats.  I just toast them in the toaster oven set on 350° for a few -minutes.  Watch them as they burn easily.
-1/2 cup nut butter
-1/2 cup SF maple syrup or agave nectar
-1/2 cup unsweetened shredded coconut
-1/2 cup chopped nuts
-1/2 cup chocolate/carob chips or dried fruit (One really good combo is cashew butter -with dried pineapple.  Yum!)
-1 tsp vanilla
-1 tsp cinnamon
-1/4 to 1/2 tsp salt (omit if using salted nut butter)
 
Directions:
 
-Pre-heat oven to 325°.
-Combine all ingredients and refrigerate for 15 minutes.
-Scoop cookie dough by TBSP (I actually use a melon ball scooper) onto parchment lined or -greased cookie sheet.
-Bake 10-12 minutes.
-Let cool for a minute or so, and then I just pick them up and form into balls before -placing on the cooling rack.
