i like to cook with garbanzo/white bean flour and almond meal. white bean flour is packed with fiber which is the biggest knock on processed white flour.

What is the consistency of white bean flour and what does it taste like??
 
I have only tried almond meal, flax meal, wheat bran oat bran, coconut, nad wheat flour.. i am def. looking for some new alternatives

Apple Fiber Loaf
 
Makes 8 slices @ 5.5 grams protein, 7 (total, not net) carbs, 0.6 grams fat per slice

 
 Ingredients:
50 grams apple fiber (about 1/2 cup)
40 grams (about 1/2 cup) of protein powder- I used vanilla whey
60 grams (or 1/4 cup) canned pumpkin
1/2 cup liquid egg whites
1/2 cup Unsweetened Almond Milk
1/2 tsp pure stevia (or to taste)
1 tsp baking powder, cinnamon to taste
 

Directions:
Preheat oven to 350-375 degrees. (I had it at 350 but ended up turning it to 375 halfway through). Spray a loaf pan with nonstick baking spray.
 
Mix all ingredients.
Pour into loaf pan, bake for about an hour or until a toothpick inserted into the center comes out clean.
